How To Boil An Egg?

I am ashamed to say that I do not know how to boil an egg. Well, really I guess I do, I just don't know when the egg is done.

How long is supposed to boil? Do I leave it in until the shell begins to crack? What's the trick?

If I'd only paid attention during Home Economics!

Waffles, Anyone?

I received one of these as a gift this weekend...
I love my friend Dena. She truly is the greatest. I have wanted one of these since our trip to a Rachael Ray taping and I mention how I need a waffle maker almost every time Dena and I talk or are together.

Now no more burnt pancakes for a while. No, we'll be having waffles!

Alone At The Breakfast Table

I do not cook breakfast for my family every single morning. My version of serving breakfast is making sure the coffee pot is programmed and ready to go for the hubs and that I have J & C's fave cereal in stock. Oh, and milk - I make sure we have milk.

Today while having my routine morning telephone conversation with my mom I decided I would cook breakfast. Homemade pancakes, turkey bacon (don't turn up your nose, it really is good), and eggs. The pancakes and bacon for the boys and eggs for the hubs. My boys turn their noses up at eggs. Do not know why. Anyway, I prepared breakfast, set the table, poured the boys their "coffee" (milk - Cole likes to pretend!), and served the boys their food. I was actually excited to sit down and eat my bowl of cereal (Koshi GoLean - love this stuff!) with the boys. Jason was already out the door with his makeshift South Texas breakfast burrito. Just as I sat down they were gone. Plates empty, chairs empty. Just me, my cereal, and cup of coffee. Are you serious?

I had to laugh. That's all I could do really. Because this is what it takes for me to enjoy my breakfast in peace. Why had I not thought of this before?? Being alone at the breakfast table is not all that bad. While I was ready to talk about the day with J & C, they had other plans. Plans to eat their breakfast and be on their way. That's ok with me because being alone at the breakfast table means I get to have my food all to myself. :)

Selfish? Maybe. But in my defense I hardly ever get to eat whatever I'm eating without having to give over half to two ravenous boys.

I must try this again. :)

Betty Crocker In The House

I've been on a little break from school and have had a lot of time on my hands. This past Monday was the beginning of catch up; time that I will spend catching up on all things neglected since, umm, since whenever. Actually that is not what this post is about. This is what this post is about...

Sweet deliciousness!

Yes, I made the above items all by myself and no, not from a box! The chocolate chip cookies I have done many times in the past but this batch was hands down the best I have ever made. The red velvet cupcakes with cream cheese frosting was my second attempt. The first was made almost 3 years ago in which I failed miserably. Those went into the garbage before anyone had the chance to grimace. The second attempt was a success. Fantastic!

I do not want to come off as being boastful but maybe I do just a little. You see, I don't cook and I sure as heck don't bake so these two successes deserve to be bragged about. The boys loved the goodies and I felt a little special each time Jase told me "mom, you make the best cookies/cupcakes in the whole world"! Cole did not have time to say much as his mouth was full - his frosted covered smile was reward enough.

Betty Crocker better watch out once I am done with school...just sayin'!

Will The Real Me Please Stand Up?

I have no idea what has come over me. I am cooking. More than I ever have. If you think I'm puzzled you should talk to Jason. He's confused. Poor guy doesn't know if he should be excited or disappointed.

This past weekend while sick I was watching Food Network and got a hair brained idea that I would cook Thanksgiving dinner for the four of us. I cooked up (pun intended) a menu that looks a little something like this:

Turkey
Stuffing
Gravy
Sweet Potato Casserole*
Peas*
Cranberry Sauce
Pumpkin Pie
Rolls

*Jason loves these two dishes. He cooks them the way his Maw Maw does - I am hoping that I cook Maw Maw's recipes to Jason's satisfaction.

Not only did I decide I would cook I also decided that I would do all of this from scratch. Well everything except the rolls and pumpkin. What was I thinking? Must of been the multiple doses of that awful Tylenol multi-symptom cold medicine I was choking down that affected my frame of mind. Must of been.

So I sit here hoping and praying that my dinner plans go as visioned. Here's to nothing catching fire, exploding, burning, or anyone crying or getting mad. The latter is me, of course. I will post pictures of my fest, if and only if, there are no major catastrophes.

Happy Thanksgiving! Hope you spend your day with loved ones and remembering everyone and everything you have to be thankful for.
